Put brown sugar in a pan on a slow fire and let it burn or parch, slowly stirring all the time. When it turns a dark brown, add water and stir well, and then bottle.
Use a few drops at a time to color and thicken gravies and soups.

Reply:the correct term is bouquet garni. It is a mixture of greens used to flavor stocks, its made up of parsley, basil and oregano all fresh, roughly chopped, wrapped in cheese clothe and tied. Then simmered int he stock.

Reply:Years ago we purchased a product called Kitchen Bouquet. It was a very dark liquid in a bottle used to give flavor and color to gravies and other foods. I was not a fan of this product, but I can remember when my mother would be in a panic if she was making gravy and was out. I doubt that this product is still on the market.

Try different things, but be sure not to over-power it with too many herbs.
